Today is National Cheese Lover’s Day. This staple dairy ingredient can be found in all four corners of the world, paired with almost every dish imaginable. The exact origins of this now immensely popular dairy product are lost to the sands of time, however it is estimated that the art of cheese making dates back to over 7,200 years, following recent discoveries along the Dalmatian Coast of Croatia. Quickly establishing itself as a luxury food item, cheese became an ever present, and continually improved product by the likes of the Egyptians, Greeks and especially the Romans; who advanced cheese-making techniques and helped spread it across the Mediterranean.

It was only late into the 18th century that arguably the best combination for cheese was discovered. According to legend, Italian tavern owner and Naples native Raffaele Esposito, along with his wife, were requested to prepare a pizza for the Queen Margherita of Savoy and King Umberto I. The Esposito family were admitted into the royal kitchens, preparing a total of three pizzas; the last of which used toppings of tomatoes, mozzarella cheese and basil, in an attempt to emulate the red, white and green of the Italian flag. It has been claimed by sources at the time, that this was the first time pizza was ever made with mozzarella cheese. By impressing the royal family with the pizza, the Esposito family successfully used the queen’s recommendation to promote their new dish, affectionately naming it the pizza Margherita.
